Kiev style cutlets

Kiev style cutlets, commonly known as Chicken Kiev, are a classic dish of breaded and fried chicken cutlets filled with a rich, flavorful butter mixture. The origins of Chicken Kiev are debated, with some tracing it to Ukrainian roots, while others suggest French influence.

Ingredients:

  • 2 large chicken breasts
  • 100g unsalted butter (softened)
  • 2 cloves garlic (finely minced)
  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon fresh dill (optional, finely chopped)
  • Salt and pepper (to taste)
  • 1 egg (beaten)
  • 1 cup flour
  • 1 cup breadcrumbs
  • Oil for frying

Instructions:

  1. Prepare the herb butter:

    • In a small bowl, mix the softened butter, minced garlic, parsley, and dill (if using). Season with a pinch of salt and pepper.
    • Shape the butter mixture into a small log, wrap it in plastic wrap, and freeze until firm (about 30 minutes).
  2. Prepare the chicken:

    • Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness (about 1/4 inch thick).
    • Season the chicken breasts with salt and pepper.
  3. Fill the chicken:

    • Once the herb butter has hardened, place a small piece of the butter in the center of each flattened chicken breast. Fold the edges of the chicken over the butter and roll tightly, making sure the butter is completely enclosed. Secure with toothpicks if necessary.
  4. Coat the chicken:

    • Roll each chicken roll in flour, then dip in the beaten egg, and finally coat with breadcrumbs, pressing the breadcrumbs onto the chicken to ensure they stick.
  5. Chill the chicken:

    • Place the breaded chicken in the fridge for about 30 minutes to firm up before frying.
  6. Fry and bake:

    • Heat oil in a large skillet over medium heat. Fry the chicken cutlets until golden brown on all sides (about 4-5 minutes per side).
    • Transfer the browned chicken to a baking sheet and finish cooking in a preheated oven at 180°C (350°F) for about 15-20 minutes, until fully cooked.
  7. Serve:

    • Let the chicken rest for a few minutes after baking. Serve with mashed potatoes, rice, or vegetables for a complete meal.
